Vegan Peanut Butter Fudge Brownies

Upon updating my blog I decided to add these ones into the mix because they're a very special recipe to me. I wanted everyone to have easy access to this recipe so we can all feast on the fudgiest peanut butter vegan brownies out there. Without further ado here we go.



BROWNIE LAYER

  • I used this brownie recipe and they turned out so well. Katie has so many great recipes on her blog!

  • Recipe Notes: I used almond flour, I subbed Costco organic creamy peanut butter for almond butter, I let mine sit in the fridge overnight then took them out the next morning to layer them



PEANUT BUTTER LAYER

  • 8 tbsp powdered peanut butter

  • 1/2 cup plain yogurt (I used Kite Hill's greek style to keep it vegan & high in protein)

  • Tater to thin

  • Tweetener to taste (sugar, coconut sugar, monk fruit, stevia, etc)

  • RECIPE: mix all that together in a bowl until smooth, spread evenly on top of brownies, & pop back in the fridge while you make the fudge





FUDGE LAYER

  • 1 cup dark chocolate chips (used Lily's because they’re my favorite chocolate chips & I use them for all my recipes)

  • 1/4 cup oil (I used avocado oil)

  • Dash pink salt + tsp vanilla extract @simplyorganicfoods

  • Flour to thicken, amount will depend on how thick you want this layer + type of flour you use. More flour = thicker fudge. I used 2 tbsp of coconut flour @bobsredmill but i’m sure oat, almond, whole wheat, gluten free, etc. would work well in adjusted amounts

  • RECIPE:

  • Add chocolate chips + oil to bowl & microwave in increments of 20 seconds, removing & stirring each time until chocolate is fully melted. stir in pink salt & vanilla extract. Stir in flour to thicken. Remove brownies from fridge & evenly spread fudge over peanut butter layer. Let them sit in the fridge for ~1 hour or until the top is hardened, then remove them & cut into squares. This made ~18 brownies.
