I think we can all agree that Mexican food is delicious at any time of the day. I’m usually the type to eat it for dinner, but recently I decided to experiment with the cuisine and serve it for breakfast. Safe to say I am so glad I did because this loaded quesadilla served with cilantro lime guacamole was the outcome. Grab the recipe here for the perfect morning meal.
Ingredients
Quesadilla
1-2 tortillas (I used Siete Foods Cassava & Coconut)
Use your hunger to judge how many tortillas you need to use
1 egg
1-2 egg whites
2-3 handfuls of spinach
Enough feta cheese to cover your tortilla
You can use whatever cheese you want here
Wild caught smoked salmon
You could also put bacon, sausage, etc. or nothing in this quesadilla and I’m sure it would still taste good
Fresh dill to taste
Pink salt + black pepper to taste
Garlic powder to taste
Ghee or cooking oil
Guacamole
1/4 avocado
Fresh cilantro to taste
Juice of 1/4-1/2 a lime
Recipe
Quesadilla
Heat up a large pan over medium heat and coat it with ghee or oil
In a separate bowl whisk egg + egg whites and season with salt, pepper, + fresh dill
Scramble eggs in pan
To the same pan add spinach and wilt in pink salt + garlic powder
Remove eggs and spinach from pan and set aside
To the pan add 1/2 or 1 tortilla (depends on how hungry you are) and sprinkle feta cheese on top of it
Let that sit and cook for a minute or two
Then add your cooked eggs and spinach + smoked salmon on top of the tortilla with cheese, and place the other half or a new tortilla on top
Let that cook for 2-3 minutes, then flip, and cook for another 2-3 minutes or until cheese is melted
Remove from heat and serve with guacamole and sauerkraut
Cilantro Lime Guacamole
In a bowl mash 1/4 of an avocado
You can add more avocado to this to make a bigger batch
To mashed avocado add lime juice + cilantro and mix
Garnish with more fresh cilantro and serve with quesadilla
This quesadilla alone would be good but dipping or stuffing it with the guacamole really takes it to the next level. I served mine with sauerkraut to get some probiotics in but feel free to eat it with whatever your heart desires.
The guacamole would also be good served with tortilla chips, tacos, raw veggies, crackers – basically anything. You can add extra avocado, lime juice, + cilantro to it and store it in the fridge to have a batch on hand at all times.
