In honor of my favorite day of the week aka #ToastTuesday, I present to you these 5 sweet and savory completely vegan, grain-free, dairy-free, and gluten-free toasts made with sweet potato instead of bread. Perfect for any day of the week and any craving these toasts are sure to please everyone. Also, don’t blame me if your self-esteem drops after looking at these beauties. You’ve been warned.
Preheat oven to 400º F
Slice 1 small sweet potato into 1-2 cm thick slices
Spray/coat sweet potato slices in cooking oil of choice
Line baking sheet with parchment paper and place sweet potato slices on it
Roast for ~20 minutes, flipping halfway through
Remove from oven and let cool
fun fact: cooked then cooled sweet potatoes are an amazing source of prebiotics
Okay now that we got the actual making of the toasts over with, its time for the fun part – the toppings! Feel free to do whatever your heart and taste buds desire, but here are the five that I made for some inspo:

Generous spread of Beetroot Dip/Hummus + Whole Foods fresh Mango Salsa
Kite Hill Foods Plain Almond Milk Yogurt + Purely Elizabeth Banana Nut Butter Grain-Free Granola
Avocado Chunks + Trader Joe’s Everything but the Bagel Seasoning
Mashed Avocado + drizzle Trader Joe’s Mixed Nut Butter + Chia Seeds
I served these with iced coffee & almond milk, more fruit, and some egg whites scrambled with turmeric and spinach. I hope y’all enjoy these as much as I did if you try them or at least enjoyed looking at them.
